Market: Chef Lenny Russo's Shell Pea-Mint Sauce

Ingredients:
1 pt. shell peas, shucked
1 pt. court-bouillon
1 c. sunflower or grape seed oil
1 c. fresh mint leaves
1 c. fresh Italian parsley leaves
1 t. sea salt
½ t. white pepper, freshly ground
Method:
Blanch the peas in salted boiling water until tender. Drain the peas and shock them in an ice water bath. Transfer them to a high speed blender. Add the remaining ingredients except for the oil, and blend them on high speed until smooth and well incorporated. With the motor running, slowly incorporate the oil.
